As Executive Sous Chef, you will beresponsible to assist the Executive Chef for the smooth running of the kitchen and willmanage areas of profit, stock, wastage control, hygiene practices and trainingwithin the kitchen.
As Executive SousChef this role involves menu development and maintaining updated and accuratecosting of all dishes prepared and sold in the Food and Beverageoperation.
You will develop standardrecipes and new dishes.You willmaintain comprehensive product knowledge including ingredients, equipment,suppliers, markets and current trends and make appropriate adjustments tokitchen operations accordingly.
You willsupport in anticipating / analyzing market changes, review operations whennecessary and conduct competitor analysis.
You will regularly control and analyze sales, costs, issuance of food,quality and presentation of food products, condition and cleanliness offacilities and equipment, guest satisfaction and marketing.
AsExecutive Sous Chef, you will actively guide and direct the kitchen brigade toensure consistency of brand standards and a high level of performance andpresentation.
Also as the Executive Sous Chef, you will be responsible for managing andmotivating your team.You will berequired to ensure that all staff within your department are adequately trainedand developed in line with company policy.
You will also be responsible to assist the Executive Chef for therecruitment and selection of your team and for managing any employee relationsissues with the support of the Human Resources Department.
You will activelyguide and direct the whole team to ensure consistency of brand standards and ahigh level of performance and service delivery.
